MANDARIN ORANGE DESSERT

2 sleeves Ritz Crackers, finely crushed
3 tsp. sugar
1 cube butter
1 tall can Mandarin Oranges, drained
1 can Sweetened Condensed Milk
1 large tub Cool Whip
1/2 can Frozen Orange Juice
Mix first 3 ingredients together. Put 3/4 of crumb mixture in the bottom of a pan. Mix the remaining ingredients together and place spread on top of crumb mixture. Sprinkle remaining crumbs on top. Refrigerate 2-3 hours before serving.

Lime-Honey Glazed Chicken


  • 6 tablespoons honey
  • 6 tablespoons reduced-sodium soy sauce
  • 2 teaspoons freshly grated lime zest
  • 6 tablespoons lime juice
  • 1 teaspoon crushed red pepper
  • 4 6-ounce bone-in chicken thighs, skin and excess fat removed
  • 2 12-ounce bone-in chicken breasts, skin and excess fat removed, cut in half crosswise


I usually just do 2 chicken breasts so cut it down how much it calls for, and I mix all the ingredients together, put in a container and coat the chicken.  Let it marinade in the fridge for all day or overnight.  The longer it marinates the better!  Cook it on the grill and it is sooo yummy!!!  


Heavenly Fruit Dip


1 (12 oz.) container whipped topping, thawed
1 sm. jar marshmallow crème
1 (8 oz.) pkg. cream cheese
2 sm. cartons strawberry yogurt

Mix ingredients together and refrigerate until ready to serve. Good with apples, strawberries, grapes, etc. Other yogurt flavors can be substituted in place of strawberry.

Buttermilk Syrup

1 cube real butter
1 c. sugar
1/2 C. buttermilk
1 tsp. Karo syrup
1 tsp. baking soda
1 tsp. vanilla

Boil butter, sugar, buttermilk, and Karo. Remove from heat and add soda and vanilla. Mixture will bubble and double in size. Let set, stir occasionally. Serve hot.

cassies chicken enchilada

cook in crock pot
chicken (i used about 10 chicken tenders and it made 8 enchiladas)
1-2 cans green chilis
cumin
red pepper seasoning (opt)
chili powder
onion
garlic
(sorry friends...i dont measure much and i guess cassie doesnt either...taste!!!)
i cooked mine for about 4 hours on high...and the chicken was so yummy and it shredded easily!!

mix together in med size bowl:
16 oz cour cream
2 cans cream of chicken soup
chili powder
cumin
a little garlic too!!

spread a small amount of sauce on tortilla, large scoop of chicken, and shredded cheese. roll and place in pan. spread remaining sauce over tortillas. pour 1-2 cans of green chili sauce over (i forgot this step, and it was very tasty with out it!!)
sprinkle with lots of cheese and bake at 350 until hot and bubbly. about 20-30 minutes

Sugar Cookies!

These taste like the 'lofthouse' cookies, they are DELISH!!!!

Ingredients
* 2/3 cup shortening
* 2/3 cup butter
* 1 1/2 cups white sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 3 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon salt
* 1/3 cup granulated sugar for decoration

Directions

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a medium bowl, cream together the butter, shortening and sugar. Stir in the eggs and vanilla. Combine the flour, baking powder and salt, stir into the creamed mixture until dough comes together. Roll dough into walnut sized balls and roll the balls in sugar. Place them on an unprepared cookie sheet about 2 inches apart.
3. Bake cookies 10 to 12 minutes in the preheated oven, until bottom is light brown. Remove from baking sheets to cool on wire racks.

Chocolate Chip Banana Bars

2 cups flour
2 tsp. baking powder
1/2 tsp. salt
2/3 cup shortening
2/3 cup sugar
2/3 cup brown sugar
1 tsp. vanilla
1 egg
2 ripe bananas, mashed
2 cups chocolate chips

Combine all ingredients. Mix well. Spread batter into greased 9 X 13 inch pan. Bake at 350 degrees for 20-25 minutes.
